Ingredients

1 large spaghetti squash
1 container part-skim ricotta cheese
1 egg
1 teaspoon salt
1/2 teaspoon pepper
1 teaspoon italian seasoning
1 cup shredded arugula
1 tablespoon olive oil
1 medium chopped onion
2 minced garlic cloves
1 pinch red pepper flakes ( to taste )
1 lb turkey Italian sausage ( hot or sweet )
1/2 cup dry red wine
1 jar Rag� Pasta Sauce ( I used Ragu Chunky Tomato , Garlic and Onion , it was fantastic ! )
4 ounces fresh mozzarella cheese
1/4 cup shredded parmesan cheese
Spaghetti Squash Layered Bake #Ragu is a delicious and comforting dish that is perfect for a cozy night in. Instructions

1.Preheat oven to 400?F. Cut spaghetti squash in half and scoop out the seeds. Place squash facedown on a baking sheet and bake for 30-40 minutes or until tender.
2.While the squash is cooking, mix ricotta cheese, egg, salt, pepper, and Italian seasoning in a small bowl. Set aside.
3.Heat olive oil in a skillet over medium heat. Add onion and garlic to the skillet and sauté for 2-3 minutes. Add turkey Italian sausage and red pepper flakes. Cook until sausage is browned.
4.Add dry red wine and wait until it has evaporated. Finally, add Ragú Pasta Sauce to the skillet and heat through.
5.Remove spaghetti squash from the oven. Using a fork, scrape the flesh of the squash into a mixing bowl. Mix the spaghetti squash with the arugula, ricotta mixture, and 1/2 cup of the Parmesan cheese.
6.Pour half the Ragu sauce on the bottom of a baking dish. Add the spaghetti squash mixture. Pour the remaining sauce on top.
7.Top the bake with fresh mozzarella cheese and the remaining Parmesan cheese.
8.Bake for 20-25 minutes or until cheese is golden brown and bubbly. Let stand for 10 minutes.
