Ingredients

2 tablespoons olive oil
2 garlic cloves , minced
1 red chile , desseded & finely chopped
400 g chopped tomatoes
50 g anchovies packed in oil ( drained & chopped )
350 g spaghetti
100 g pitted black olives , drained & sliced
1 tablespoon capers , drained
6 basil leaves , shredded , plus extra
basil leaves , for serving
Spaghetti Puttanesca is a classic Italian pasta dish made with a tangy tomato sauce, olives, capers and anchovies. The origins of the dish are unclear, but it is believed to have originated in Naples in the mid-20th century. The name ‘puttanesca’ is rumored to have been inspired by the ladies of the night, who were known for their quick meals between clients. Instructions

1.Cook spaghetti as per packet instructions.
2.Heat olive oil in a pan, add garlic and chilli. Cook for 1 minute.
3.Add chopped anchovies and cook until they dissolve (approximately 2 minutes).
4.Add chopped tomatoes and cook for 10 minutes, stirring occasionally.
5.Add drained black olives, capers and chopped basil leaves.
6.Drain cooked pasta and add it to the pan with sauce.
7.Toss the pasta with the sauce and mix well.
8.Top with extra shredded basil leaves and serve hot.
