1 pound guanciale ( cured pork cheek ) , diced
1 package spaghetti
3 eggs
10 tablespoons grated pecorino Romano cheese , divided
salt to taste

Instructions

6.Divide the pasta into bowls and sprinkle each serving with the remaining 2 tablespoons of pecorino Romano cheese and additional black pepper, if desired.
