Ingredients

1 lb spaghetti
2 cups cubed pancetta or 2 cups bacon
2 tablespoons olive oil
1/4 cup dry white wine ( I used vermouth ) or 1/4 cup vermouth ( I used vermouth )
4 eggs
1/2 cup parmesan cheese , freshly grated ( I used more of course )
black pepper
1/4 cup heavy cream
freshly grated nutmeg ( did n't freshly grate , but it was fine )

Instructions

1.Boil spaghetti in salted water until al dente.
2.In a skillet, sauté pancetta/bacon in olive oil until crispy.
3.Deglaze the pan with white wine/vermouth, scraping up any brown bits.
4.In a bowl, beat eggs together with parmesan cheese and black pepper.
5.Drain the spaghetti and reserve 1 cup of pasta water.
6.Add spaghetti to the skillet with pancetta/bacon and toss.
7.Remove from heat and add egg mixture and heavy cream. Toss to combine and add pasta water to create a creamy sauce.
8.Season with freshly grated nutmeg and additional parmesan cheese if desired.
