Spaetzle is a traditional German pasta made with flour, milk, and eggs. It is also popular in Switzerland and Austria and is often served with hearty stews and soups. This recipe combines spaetzle with the mildly sweet and nutty flavor of gruyere cheese and the natural sweetness of caramelized onions. The combination of these ingredients creates a warm and comforting meal that's perfect for a cozy night in. The spaetzle itself is light and fluffy in texture and goes well with the melted gruyere cheese, making it a simple yet flavorful main course option for dinner tonight!

Instructions

1.In a medium bowl, whisk together milk, egg yolks, and egg until well combined.
2.Gradually add flour, nutmeg, 1/2 teaspoon salt, and 1/4 teaspoon black pepper to form a sticky dough.
3.Fill a large pot with salted water and bring to a boil.
4.Working in batches, scrape dough with a spatula over a spaetzle maker or colander into boiling water, stirring occasionally, until spaetzle floats to the top and is tender, about 2-3 minutes. Transfer spaetzle with a slotted spoon to a colander and rinse with cold water to cool.
5.In a large nonstick skillet, heat peanut oil and butter over medium-high heat. Add sliced onion and a pinch of salt, and cook stirring frequently until caramelized, about 15-20 minutes.
6.Add cooked spaetzle to the skillet, sprinkle with gruyere cheese and stir until cheese is melted and gooey. Serve and enjoy!
