Ingredients

1 1/2 tablespoons unsalted butter
1 large Spanish onion , halved and thinly sliced
1 large sprigs thyme
1 teaspoon kosher salt , plus additional for cooking water
1 small bunch swiss chard , stems discarded and leaves cut into pieces
2 1/4 cups all purpose flour
1/4 teaspoon fresh grated nutmeg
2 large eggs , lightly beaten
3/4 cup milk
2 cups grated emmentaler cheese ( about 8 ounces ) or 2 cups gruyere cheese ( about 8 ounces )
Spaetzle with Browned Onions, Swiss Chard, and Emmentaler is a traditional German dish that combines tender spaetzle, caramelized onions, flavorful swiss chard leaves, and creamy emmentaler cheese. It's a warm and hearty meal that can be easily prepared in your own kitchen. Spaetzle are a type of soft egg noodle or dumpling that are similar to Italian pasta but made with less egg and more flour. They are a staple of Bavarian cuisine and can be delicious as a side dish or as a main course.

Instructions

1.In a large sauté pan, melt butter over medium heat.
2.Add onions, thyme, and salt; cook, stirring occasionally, for about 10 minutes or until onions are soft and golden brown. Remove thyme sprigs and discard.
3.In a large pot of boiling salted water, cook the swiss chard leaves for about 1 minute, then remove with a slotted spoon and place them in a colander.
4.Mix flour, nutmeg, eggs, milk, and salt in a large bowl with a wooden spoon or a mixer.
5.Bring the chard water back to a boil and place a spaetzle press or a colander over the water. Push the dough through the holes of your spaetzle press, or press the dough in batches through a colander to create long strands. Cook spaetzle for about 3 to 4 minutes or until they float on the surface of the water. Drain the spaetzle in a colander and run under cold water to stop the cooking process.
6.Rinse chard under cold water to cool, drain, and squeeze out any excess water. Transfer spaetzle to the pan with the onions and toss to combine with chard. Add the cheese and toss until the cheese is melted. Serve hot.
