Ingredients

3 lbs pork loin , cut into 1-inch chunks . ( Lamb or beef may also be used )
1 cup olive oil
1/3 cup lemon juice
1/2 cup dry red wine
2 tablespoons red wine vinegar
4 garlic cloves , crushed
4 large bay leaves
1 1/2 tablespoons oregano
1 1/2 tablespoons rosemary
1/2 teaspoon black pepper
1 teaspoon kosher salt
12 large white mushrooms
2 tablespoons white wine or 2 tablespoons lemon juice
4 large firm tomatoes or 18 cherry tomatoes
3 bell peppers
2 large onions or 18 white pearl onions
2 lemons , cut into wedges

Instructions
