Instructions

1.Heat 2 tablespoons of vegetable oil in a large non-stick skillet over medium-high heat.

6.Place a warm tortilla on a flat surface. Add 1/2 cup of the potato filling in the center of the tortilla. Fold in the sides of the tortilla and roll up tightly. Repeat for the other tortillas.
