1/2 teaspoon ground cumin
1/2 teaspoon dried chipotle powder
1/2 teaspoon salt
1/2 teaspoon pepper
1 package phyllo pastry sheet , thawed ( 9x14-inch sheets )

Instructions

1.Preheat your oven to 375 F (190 C).
2.In a mixing bowl, combine the mashed potatoes, corn, shredded cheese, green onion, minced jalapenos, minced garlic, cilantro leaves, cumin, chipotle powder, salt, and pepper. Mix thoroughly.
3.Cut each phyllo sheet into 3 equal strips.
4.Place a heaping tablespoon of the filling onto the end of each strip.
5.Fold the pastry over the filling to form a triangle, and keep folding until you reach the end of the strip.
6.Brush each samosa with olive oil, and place them on a baking sheet lined with parchment paper.
7.Bake for 12-15 minutes, or until the pastry is golden brown and crispy.
