1/2 lb chorizo sausage or 1/2 lb andouille sausage , casing removed and finely chopped
2 scallions , chopped ( green onions )
3 small plum tomatoes , seeded and chopped
1 jalapeno , seeded and finely chopped
1 small white onion , finely chopped
1/4 cup finely chopped fresh cilantro
coarse salt

Instructions

1.Heat a large skillet over medium heat.
2.Lay out the tortillas and sprinkle with cheese.
3.Add the chorizo, scallions, tomatoes, jalapeno, white onion, cilantro and salt.
4.Fold the tortillas over and press lightly.
5.Cook the quesadillas for around 2 minutes on each side or until the cheese is melted and tortillas are crispy and golden brown.
6.Cut the quesadillas into wedges and serve with sour cream, salsa, and guacamole, if desired.
