4 skinless , boneless chicken breast halves - pounded thin
12 ounces chorizo sausage
2 cups shredded Monterey Jack cheese
1 1/2 cups masa harina
1 can canola cooking spray

Instructions

1.Preheat oven to 375°F.

7.In a separate bowl, combine 1 1/2 cups masa harina and enough water to make a moist dough.

9.Place the roulades on a baking sheet coated with cooking spray and spray the tops of the roulades with canola cooking spray.
10.Bake for 35-40 minutes or until the chicken is thoroughly cooked and no longer pink or until the internal temperature of the chicken reaches 165°F. Let the chicken rest for 5 minutes before serving with salsa on top.
