Ingredients

1 cup plain nonfat yogurt
4 tablespoons chopped green onions
2 chipotle peppers
4 tablespoons peanut butter

1 pound skinless , boneless chicken breast halves - cut into 1/2 inch strips
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon chili powder
1/2 teaspoon garlic powder
1/2 teaspoon dried oregano
1/2 teaspoon ground cumin
3 tablespoons vegetable oil , divided
1 medium onion , sliced
1 red bell pepper , julienned
4 pitas
1 cup shredded lettuce
1 cup shredded white Cheddar cheese

Instructions

1.In a food processor, combine the yogurt, green onions, chipotle peppers, peanut butter, and 1/4 teaspoon salt. Blend until the mixture is smooth, then transfer to a bowl and set aside.
2.Season the chicken strips with 1/2 teaspoon salt, pepper, chili powder, garlic powder, oregano, and cumin. Mix well.
3.In a large skillet, heat 2 tablespoons of the oil over medium-high heat. Add the seasoned chicken strips and cook for 5 minutes or until browned. Remove the chicken from the skillet and set aside.
4.In the same skillet, heat the remaining tablespoon of oil over medium heat. Add the sliced onion and red bell pepper and cook for 5 minutes or until tender.
5.Preheat the oven to 350°F. Cut the pitas in half and place them on a baking sheet. Bake for 5 minutes or until they are warmed through.
6.Build each pita by spreading 2 tablespoons of the chipotle sauce inside. Add some shredded lettuce, sliced chicken, sautéed onion and red bell pepper, and shredded white Cheddar cheese. Fold the pita in half and serve immediately.
