Instructions

.In a large skillet, heat the olive oil over medium heat.
.Add the green onions and cook for 2-3 minutes, stirring occasionally.
.Add the fresh spinach, corn, and black beans to the skillet, and cook until the spinach is wilted and the vegetables are heated through, about 4-5 minutes.
.Add the lime juice, salt, and cumin to the skillet and stir to combine.
.Remove the skillet from the heat and add the shredded Monterey Jack cheese, stirring until the cheese is melted and evenly distributed.
.Preheat the vegetable oil in a large pot or deep fryer to 375°F.
.Place an egg roll wrapper on a clean surface with one corner facing you.
.Spoon about 1 1/2 tablespoons of the vegetable filling onto the wrapper, leaving about 1 inch of space from each corner.
.Roll the corner nearest you up and over the filling, tucking it tightly under the filling.
.Fold in the right and left corners, then continue to roll the egg roll tightly until there is only a small point of the wrapper remaining.
.Brush a small amount of water onto the remaining corner, then press it firmly onto the egg roll to seal.
.Repeat with the remaining egg roll wrappers and filling.
.Carefully place the egg rolls into the hot oil and fry until golden brown and crispy, about 3-4 minutes.
.Remove the egg rolls from the oil with a slotted spoon and place them onto a paper towel-lined plate to drain.
.Serve hot with your favorite dipping sauce.
