Ingredients

2 cups water
1 cup quinoa
1 can black beans , rinsed and drained
1 red bell pepper , chopped
1/2 cup fresh spinach leaves
2 tablespoons barbeque sauce
1 tablespoon chopped garlic
1 pinch ground cumin , or more to taste
1 pinch cayenne pepper , or more to taste
1/4 cup shredded Cheddar cheese
3 flour tortillas , warmed
This recipe is a twist on the traditional burrito and is perfect for anyone on the go. Southwest Roll-Ups are an easy and delicious lunch idea that can be prepared ahead of time. They combine the flavors of southwestern cuisine with the convenience of a sandwich, and they’re perfect for taking to work or school. These roll-ups are also incredibly versatile - you can swap out the filling ingredients for whatever you have on hand or whatever you happen to be in the mood for.

Instructions

1.Rinse quinoa 2-3 times and add it in a pot with water. Heat it on low medium heat.
2.Add minced garlic, cumin, cayenne pepper, salt in the pot, Stir & let it simmer for 20 minutes.
3.Remove the lid and let the quinoa stand for 5 minutes. Fluff it with a fork and set it aside.
4.Apply bbq sauce over warm flour tortillas and top it with fresh spinach leaves.
5.Add quinoa mixture, chopped red bell pepper, and black beans on top of the spinach leaves.
6.Add cheese and roll the tortillas tightly from one end to the other.
7.Cut the prepared Southwest Roll-Ups into two or three pieces with the help of a sharp knife.
