Ingredients

1 1/4 lbs chicken tenderloins
3/4 cup lime chipotle marinade , divided
1 tablespoon olive oil
1 orange bell pepper , sliced
1 red bell pepper , sliced
1 yellow bell pepper , sliced ( optional )
1 small jalapeno pepper , sliced ( optional )
3 green onions , cut into 1/2 inch pieces
2 tablespoons fresh cilantro leaves , chopped
1 can mandarin oranges in light syrup , drained
2 packages precooked whole grain brown rice
lime wedge ( optional , but encouraged ! )

Instructions

1.In a large bowl, mix the chicken and 1/2 cup of the lime chipotle marinade until coated and set aside.
2.Heat olive oil in large skillet over medium-high heat.
3.Add peppers and sauté for 3-4 minutes until slightly soft.
4.Add jalapeno pepper (optional) and sauté for another 1-2 minutes.
5.Add green onions, cilantro, and the remaining 1/4 cup of lime chipotle marinade to the skillet.
6.Add the chicken to the skillet and cook for 5-7 minutes or until fully cooked.
7.Add in the mandarin oranges and stir to combine.
8.Heat precooked whole grain brown rice in the microwave for 1-2 minutes.
9.Serve the chicken and vegetable mixture over the heated rice. Squeeze fresh lime juice over the top (optional, but encouraged!).
