2 medium potatoes , cut into chunks
vegetable oil ( for frying )
8 shallots , finely chopped
4 stalks fresh lemongrass , finely chopped
2 cloves garlic , finely chopped
2 fresh red chilies , finely chopped
2 tablespoons mild indian curry powder
450 g skinless chicken breasts , chopped into bite-sized pieces
1 teaspoon sea salt
300 ml coconut milk
600 ml chicken stock
fresh Thai basil ( optional )
This Southern Vietnamese Chicken Curry recipe is a flavorful and warming dish that's perfect for cooler weather. Instructions

1.Parboil the potatoes for 8-10 minutes. Drain and set aside
2.In a large, deep frying pan or wok, heat the oil and fry the shallots, lemongrass, garlic, and chilies for 1-2 minutes until fragrant
3.Add the curry powder and fry for another 30 seconds
4.Add the chicken pieces, salt, coconut milk, and chicken stock. Stir everything together and bring to a boil.
5.Reduce heat to medium and let the curry cook for 15-20 minutes, or until the chicken is cooked through and the potatoes are tender.
6.If desired, garnish with fresh Thai basil leaves.
