Biscuits and gravy are staple Southern breakfast or brunch dishes that have been passed down for generations. Enjoyed throughout the region of southern United States, it’s the ultimate comfort food that satisfies both stomachs and souls. The simplicity of the dish adds to its appeal, with just a few ingredients needed to make the perfect biscuits and gravy. While traditionally seen as a breakfast food, biscuits and gravy can be enjoyed as a main course at any time of day.

Instructions

.For the biscuits-
.Preheat oven to 450°F.
.In a mixing bowl, sift the flour and cut in shortening or butter until it is in small pieces.
.Add the milk to the flour mixture. Stir until the dough mix is smooth.
.Knead the dough for a minute or two on a floured surface. Then roll the dough out to 1/2 inch thickness. Cut the biscuits out with a round cookie cutter or the mouth of a glass.
.Bake for 10-14 minutes until golden brown.
.For the gravy-
.In a large skillet, cook the sausage over medium-high heat until browned, breaking it up into small pieces.
.Remove sausage with a slotted spoon and set aside, keeping the grease in the pan.
.Reduce the heat to medium and add the shortening or bacon drippings.
.Slowly stir in the flour to make a roux. Cook the roux for a few minutes until it is golden brown. Slowly pour in the milk, whisking constantly to prevent lumps.
.Add the salt and black pepper, and continue to stir as the mixture thickens. Once the mixture has thickened, add the sausage back in, stir to combine and heat through.
