Ingredients

6 large chicken breasts ( skinless , boneless )
garlic powder
2 red onions ( sliced )
1 green pepper ( diced or sliced , either way )
1 pint stewed Mexican tomato
1 pint Italian stewed tomatoes
5 1/2 ounces tomato paste
1 1/2 teaspoons basil
1/2 teaspoon oregano
1 teaspoon cajun seasoning , Add more if you like it spicy hot
salt & pepper , over top
2 cups mozzarella cheese ( Grated )
cooked lasagna noodles ( Optional if you wish to serve the chicken and sauce over noodles )

Instructions

1.Preheat the oven to 375°F.
2.Season the chicken breasts with garlic powder, salt, and pepper.
3.Spread sliced red onions and diced or sliced green pepper in a 9x13 inch baking dish.
4.Mix together stewed Mexican tomatoes, Italian stewed tomatoes, tomato paste, basil, oregano, and cajun seasoning to make the sauce. Pour the sauce over the onions and peppers.
5.Add the seasoned chicken breasts to the top of the sauce and vegetables.
6.Cover with grated mozzarella cheese.
7.Bake for 45-50 minutes or until the chicken is cooked through and the cheese is melted and bubbly.
8.Let rest for 5 minutes before serving.
9.Optionally serve over cooked lasagna noodles for a complete meal.
