Ingredients

1 pound dried pinto beans
1/2 pound bacon
1/2 teaspoon salt
1/2 teaspoon garlic powder
1 bunch cilantro , chopped
1 bunch green onions , chopped
1 can diced tomatoes
1 fresh jalapeno pepper

Instructions

1.Sort and wash the beans, then place them in a large pot with enough water to cover them by 2 inches. Bring to a boil over high heat, then reduce the heat to low and simmer for 1 hour.

3.After an hour of simmering, add the bacon, jalapeno, salt, and garlic powder to the pot. Stir to combine and continue simmering for another hour, or until the beans are tender.
4.Once the beans are cooked, stir in the chopped cilantro, green onions, and can of diced tomatoes. Cook for another 10-15 minutes to let the flavors meld together.
5.Serve the beans hot, garnished with additional cilantro or green onions if desired.
