Ingredients

4 poblano chiles
1 lb ground beef
taco seasoning
3 tablespoons water
1 can refried beans
1 cup salsa
2 cups Mexican blend cheese , divided
1 can hominy ( corn will also work )
2 cups crushed tortilla chips
1 can black olives
2 green onions , sliced
South of the Border Shepherd's Pie is a unique twist on a traditional Shepherd's pie that combines flavors of Mexico with an all-time classic dish. Instructions

1.Preheat oven to 350 degrees Fahrenheit.
2.Place poblano peppers on a baking sheet and roast for 20-25 minutes or until the skin is charred and blistered.
3.Remove from oven and place in a plastic bag and seal the bag. Let rest for 10 minutes. Remove from bag and peel the skin off the peppers.
4.While the peppers cool, brown the ground beef in a large skillet over medium heat, breaking it up with a wooden spoon.
5.Add taco seasoning and water to the skillet and cook for additional 3-4 minutes.
6.Add refried beans and salsa to the beef and mix well.
7.Add hominy and roasted poblano peppers to the skillet, stir to combine.
8.In a 9x13 baking dish, spread a layer of crushed tortilla chips on the bottom of the dish.
9.Pour the beef mixture on top of the tortilla chips. Sprinkle 1 cup of Mexican blend cheese on top of the beef mixture.
10.Add another layer of crushed tortilla chips and sprinkle remaining cheese on top of tortilla chips.
11.Top with black olives and sliced green onions.
12.Bake for 25-30 minutes or until cheese is melted and bubbly.
