Ingredients

10 small dried chilies
6 tablespoons coriander seeds
2 tablespoons cumin seeds
2 teaspoons black peppercorns
2 teaspoons fenugreek seeds
2 teaspoons Urad Dal ( white split gram beans )
2 teaspoons channa dal ( yellow split peas )
2 teaspoons mung dal ( yellow mung beans )
1 1/2 tablespoons ground turmeric

Instructions

1.In a pan, dry roast the coriander seeds, cumin seeds, black peppercorns, fenugreek seeds, urad dal, channa dal, and mung dal until they are fragrant and lightly brown.
2.Add the dried chilies and continue to roast until the chilies become slightly darker and the mixture is fragrant.
3.Remove from heat and let cool.
4.Grind the mixture in a spice grinder or mortar and pestle until it becomes a fine powder.
5.Add the ground turmeric and mix well.
6.Store the spice mixture in an airtight container for up to six months.
