Ingredients

1 1/2 small red onions
1 -2 serrano chile chile , minced
4 eggs
3 tablespoons oil or 3 tablespoons ghee
2 garlic cloves , finely minced
1 teaspoon fresh ginger , very finely minced ( or grated )
2 small tomatoes , finely chopped
1/2 teaspoon turmeric powder
1/2 teaspoon cayenne pepper
salt , to taste
1/2 cup water

Instructions

7.Stir the mixture once to scramble the eggs and then let it cook for 3-4 minutes.
8.Turn off the flame and keep the covered pan undisturbed for a few more minutes.
9.Garnish with chopped cilantro and serve hot with rice or roti.
