1/2 cup dry coconut powder
3 tablespoons white poppy seeds

1/2 cup roasted peanuts
12 small eggplants , about the size of an egg
1/4 cup oil , plus
2 tablespoons oil
1 teaspoon cumin seed
1 teaspoon mustard seeds
1 cup onion , chopped
2 tablespoons ginger-garlic paste
1 teaspoon turmeric
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon chili powder , to taste
2 teaspoons kosher salt
2 cups fresh tomatoes , peeled seeded and chopped
1 1/2 cups water
2 teaspoons garam masala
3 tablespoons fresh coriander , chopped
South Indian Eggplant Curry is a dish from Tamil Nadu, India. It is a classic vegetarian dish that is usually served with rice or roti. Instructions

1.Roast coconut powder, white poppy seeds, sesame seeds, cumin seeds, and roasted channa dal. Grind them together with roasted peanuts.
2.Cut eggplants in half lengthwise. Heat oil in a pan and add cumin and mustard seeds. Wait till they splutter, then add chopped onions, ginger-garlic paste, turmeric, ground cumin, ground coriander, chili powder, and kosher salt. Mix well.
3.Add chopped tomatoes and cover the pan. Cook till they are fully tender.
4.Remove the lid and add the prepared masala to the pan. Add water, cover, and cook for 5 minutes.
5.Add eggplants to the pan with the masala. Coat them well, cover the pan, and cook for 8-10 minutes.
6.When the eggplants are tender, add garam masala and chopped coriander. Mix well and serve hot.
