Ingredients

5 cups cake flour
2 cups brown sugar or 2 cups yellow sugar , if available
1 teaspoon baking soda
1/2 teaspoon cream of tartar
1 teaspoon ground cloves
1 tablespoon ground cinnamon
1 teaspoon ground nutmeg ( optional )
2 teaspoons salt
1/4 lb butter , soft
1/4 lb rendered pork fat ( or Crisco if you must , see note below about pork fat )
1/2 1/2 cup madeira wine or 1/2 cup port wine , but you may need up to 3/4 cup of the sweet wine
2 large eggs , whisked well

Instructions

1.Preheat the oven to 350°F (180°C) and prepare baking sheets.
2.Sift together the flour, brown sugar, baking soda, cream of tartar, cloves, cinnamon, nutmeg, and salt into a large mixing bowl.
3.Add the softened butter and rendered pork fat, and then mix well until the mixture is crumbly.
4.Mix in the eggs and madeira/port wine until a stiff dough forms.
5.Knead the dough lightly and roll out into thin circles, around 3mm thick.
6.Cut into shapes with cookie cutters and place onto the prepared baking sheets.
7.Bake for 10-15 minutes until lightly golden.
8.Remove from the oven and leave to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
