2 1/2 cups speckled sugar beans
water to cover
2 pounds bone-in beef chuck , cut into chunks
4 large onions , thickly sliced
1 cube beef bouillon
2 1/2 tablespoons hot water
3/4 cup red wine
1/4 cup tomato paste
1 packet dry oxtail soup mix
3 tablespoons Worcestershire sauce
2 tablespoons soy sauce
1 pinch cayenne pepper ( optional )

Instructions

1.Rinse the speckled sugar beans and place them in a large pot with enough water to cover them.
2.Bring to a boil over medium-high heat, then reduce the heat and simmer until the beans are tender. It takes about 2 hours.
3.In another large pot, brown the beef chunks over medium-high heat. Add the sliced onions and cook until the onions are soft.
4.Add the cooked speckled sugar beans into the pot with the beef and onions. Add the beef bouillon cube and hot water.
5.Add the red wine, tomato paste, dry oxtail soup mix, Worcestershire sauce, soy sauce and cayenne pepper (if using) to the pot and stir well.
6.Bring the soup to a gentle simmer and cook for 20 minutes, until all the flavors combine. Serve hot and enjoy!
