Ingredients

125 g butter
125 ml cream
125 ml caster sugar
625 ml self raising flour , sifted
1 teaspoon strawberry essence
200 g strawberry jam
375 ml boiling water
1 teaspoon food coloring ( pink or red )
desiccated coconut , as required
South African Snowballs are a popular dessert enjoyed by many across the country. These snowballs are small balls of sweet and crumbly dough rolled in coconut and then dipped in a sticky strawberry syrup. They're named snowballs because of their round, snowball-like appearance, with coconut flakes resembling snow. The strawberry syrup adds a fruity, sweet layer of flavour that complements the coconut flavour of the snowballs nicely. This sweet treat is simple to make and is perfect for serving at tea-time or for dessert. The recipe yields plenty of snowballs, so there will be enough to share with family and friends.

Instructions

1.In a large mixing bowl, cream the butter and caster sugar together until well combined.
2.Add the cream and strawberry essence, mix well.
3.Slowly add the sifted self-raising flour, mixing well until a sticky dough forms.
4.Roll the dough into 15g balls and place them on a lightly greased baking tray.
5.Bake at 180°C for 15-20 minutes until the snowballs turn light golden brown in colour.
6.In the meantime, prepare the strawberry syrup. Pour the boiling water over the strawberry jam in a saucepan, stir well, then add the food coloring.
7.Bring the mixture to a boil while stirring continuously. Reduce the heat and let it simmer for 5-6 minutes until the syrup thickens slightly.
8.Remove the snowballs from the oven, and place them in the strawberry syrup one at a time, coating them with the syrup.
9.Place the coated snowballs on a plate and let them cool.
10.Roll the cooled snowballs in desiccated coconut, until they're coated. Store in an airtight container until ready to serve.
