1/4 cup linseeds , crushed , ground or 1/4 cup seeds , mixed
4 teaspoons kosher salt
3 tablespoons seeds , any combination for topping

Instructions

1.In a medium-sized bowl, mix sugar, half cup of warm water, and yeast. Let it stand for about 10 minutes until it gets foamy.
2.Add the remaining 2 cups of warm water, molasses, and vegetable oil to the bowl. Mix it well.
3.Add the whole wheat flour, rolled oats, rye flour, wheat bran, wheat germ, sunflower seeds, sesame seeds, poppy seed, linseeds, and salt to the bowl. Mix it all until it forms a sticky dough.
4.Cover the dough and let it stand for an hour or until its volume becomes double.
5.Preheat the oven to 375°F.
6.Knead the dough on a lightly floured surface for around 5 minutes. Then, shape it into a free-standing round loaf and place it on a baking sheet covered with parchment paper.
7.Let the dough rest for 10 minutes.
8.Brush the top of the dough with water and sprinkle any preferred seeds on top.
9.Bake for 35-45 minutes, or until golden brown.
10.After the baking, let the bread cool for approximately 15 minutes before slicing.
