125 g butter
100 g caster sugar
1 egg
275 g flour
10 ml baking powder
2 ml salt
1 liter milk , plus
125 ml milk
3 eggs
30 g flour
25 g butter
150 g sugar
30 g cornflour
5 ml vanilla essence
2 ml salt
10 ml ground cinnamon

Instructions

1.Preheat oven to 180°C/375°F.
2.Grease an 18-20cm tart tin.
3.In a bowl, cream the butter and sugar together until light and fluffy.
4.Beat in the egg.
5.Sift the flour, baking powder and salt together and add to the creamed mixture.
6.Mix until a soft dough forms.
7.Press dough into greased tart tin.
8.Prick dough with a fork a few times.
9.Bake for about 15 minutes or until light golden brown.
10.In a saucepan, bring one liter of milk to boiling point. Mix the remaining milk and eggs together.
11.Add the flour, butter, sugar, cornflour, vanilla essence, salt and cinnamon, and mix well.
12.Slowly add the egg mixture to the boiling milk in the saucepan, stirring continuously until thickened.
13.Pour the mixture into the baked shortcrust pastry tart.
14.Allow to cool.
