3 phyllo pastry sheets
3 tablespoons butter ( OR olive oil )
7 ounces feta cheese , crumbled
3 1/2 ounces cheddar cheese , mature , roughly grated
4 1/2 ounces mozzarella cheese , roughly grated , pref smoked
2 ounces pecorino cheese , roughly grated
2 ounces walnuts
4 -6 tablespoons peppadew peppers , pickled , finely diced ( OR use pickled , jarred red bell pepper )
1 cup spring onion , chopped , white and green parts ( about 2 bunches )
2 tablespoons breadcrumbs , dried ( shops often sell it )
3 eggs , largest size
1/2 teaspoon Tabasco sauce ( or other pepper sauce )
2 tablespoons milk ( or less , see directions )
This South African-Greek Cheese Pie is a fusion of two cultures, combining the flaky pastry of a Greek cheese pie with the creamy, cheesy filling of a South African tart. Instructions

1.Preheat your oven to 375°F (190°C) and line a 9-inch (23cm) round cake tin with parchment paper.
2.Lay one sheet of phyllo pastry on the bottom of the lined cake tin and brush with melted butter or olive oil.
3.Repeat with the remaining two sheets of phyllo, brushing each layer with butter or oil.
4.In a large bowl, combine the crumbled feta cheese, grated cheddar and mozzarella cheeses, grated pecorino cheese, chopped walnuts, finely diced pickled peppers, and chopped spring onions. Mix well.
5.Add the breadcrumbs, eggs, Tabasco sauce, and milk to the cheese mixture and mix until well combined.
6.Pour the cheese mixture into the prepared cake tin and smooth the top with a spoon.
7.Bake for 30-35 minutes or until golden brown and set.
8.Let the pie cool in the tin for 10-15 minutes before removing and slicing. Serve warm or at room temperature.
