50 g fresh yeast
1/2 cup lukewarm water , plus 1/4 tsp extra
1 teaspoon salt , plus 1/4 tsp extra
250 g butter
1/4 cup margarine
150 ml milk
150 ml cream
6 1/2 cups plain flour
4 eggs
1 egg yolk
oil , for spraying
2 1/2 cups sugar
5 tablespoons ground cinnamon
3/4 cup melted butter , for brushing
handful sultana
2 eggs , beaten

South African Cinnamon Buns Boolkes are a delicious and traditional pastry that is often enjoyed for breakfast or as a snack. These soft and sticky cinnamon buns are filled with a mixture of sugar, cinnamon, and sultanas, resulting in a sweet and spicy flavor. Instructions

1.Pour the yeast and warm water into a bowl, add 1/4 tsp salt and stir until dissolved.
2.In a small saucepan, melt together the butter and margarine, add the milk and cream and heat gently until just warm.
3.Sift the flour and remaining salt into a large bowl. Make a well in the centre and add the yeast mixture, melted butter mixture and eggs. Mix with a wooden spoon to make a soft dough.
4.Knead the dough on a floured surface, until smooth and elastic. Put the dough into a lightly oiled bowl, cover with a tea towel and leave in a warm place until risen to double the size.
5.For the filling, combine the sugar, cinnamon and sultanas. Roll out the dough into an oblong on a floured surface, brush with melted butter and sprinkle the filling on top.
6.Roll the dough into a long sausage shape and cut into even slices. Place on a greased baking sheet, brush with beaten egg and cover with a tea towel. Leave to prove for 10-15 minutes.
7.Preheat the oven to 180°C (fan). Brush the rolls with the remaining egg and bake for 18-20 minutes, until golden. While still warm, brush with melted butter and dust with icing sugar.
8.Serve hot or cold with tea or coffee.
