1 baking potato , cut into 1/2-inch cubes
2 tablespoons butter
1 1/2 cups onions , minced
3 cups leeks , thinly sliced
3/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
2 turnips , peeled and cut into 1/2-inch cubes
1 small celeriac , peeled and cut into 1/2-inch cubes
2 cups water
2 cups whole milk
8 slices French bread
4 ounces beaufort cheese ( Swiss cheese works as well ) or 4 ounces gruyere cheese , grated ( Swiss cheese works as well )

Instructions
