2 small turnips or 2 small purple turnips
1 small swede ( also known as rutabaga or yellow turnip )
2 ounces unsalted butter
40 40 fluid ounces turkey broth or 40 fluid ounces vegetable stock
1 pinch freshly grated nutmeg
salt , to taste
fresh ground pepper
5 fluid ounces light cream

Instructions

1.Peel and chop the onion, carrots, turnips, and swede.
2.Melt the butter in a large pot over medium heat.

4.Add the turkey broth or vegetable stock, nutmeg, salt, and pepper.
5.Bring to a boil, then reduce heat and let simmer until the vegetables are cooked through.
6.Blend the soup until smooth using an immersion blender or in batches in a traditional blender.
7.Stir in the light cream and adjust seasoning as desired.
