Ingredients

2 large heads of garlic
2 cups boiling water
2 quarts cold water
1 tablespoon salt
1/4 teaspoon pepper
2 large whole cloves

4 tablespoons melted butter
6 -8 pieces French bread , toasted & buttered
1/2 cup grated swiss cheese

Instructions

1.Preheat the oven to 400°F.
2.Cut the tops off each garlic head, exposing the cloves. Place them both in a small baking dish and add the boiling water. Cover the dish with foil and bake for 45 minutes.
3.Remove the garlic from the oven and let it cool for 15 minutes.
4.Squeeze the garlic from each clove into a large soup pot. Add the cold water, salt, pepper, cloves, sage, thyme, parsley, and olive oil to the pot.
5.Bring the soup to a boil and reduce the heat. Simmer uncovered for 30 minutes.
6.In a separate mixing bowl, beat the egg yolks. Add the melted butter and stir to combine.
7.Slowly add 1 cup of the hot soup into the egg mixture, stirring constantly.
8.Gradually pour the egg mixture back into the pot with the hot soup, stirring constantly.
9.Cook for an additional 5 minutes over medium heat. Do not boil.
10.To serve, ladle soup into individual bowls and top each with a piece of toasted and buttered French bread. Sprinkle swiss cheese on top of bread, if desired.
