4 eggs , separated , room temp
10 tablespoons sugar , divided
3 tablespoons all-purpose flour
1/3 cup fresh lemon juice
2 lemons , zest of , grated
1 deep 9 inch partially baked sweet tart crust ( recipe 71610 )

Instructions

1.Preheat the oven to 350 F.
2.With an electric mixer, beat the egg yolks, 8 tablespoons of sugar, flour, lemon juice and zest until blended.
3.In a separate bowl, beat egg whites until soft peaks form. Gradually add in 2 tablespoons of sugar and continue to beat until peaks are stiff.
4.Fold 1/4 of beaten egg whites into lemon mixture to lighten.
5.Pour lightened mixture over remaining beaten whites in the bowl. Fold gently until completely blended.
6.Pour mixture into partially baked tart shell.
7.Bake for 20 to 25 minutes, or until the soufflé topping is puffed and lightly browned.
8.Cool tart in pan set on a wire rack for about 20 minutes before serving.
