Instructions

.Begin by marinating the meat. In a large mixing bowl, add the cubed beef or lamb, grated gingerroot, grated garlic, and a pinch of salt. Allow the meat to marinate in the fridge for at least 2 hours or overnight for best results.
.Preheat your grill or grill pan to medium-high heat.
.Thread 6 pieces of meat, 3 onions, and 2 dried apricots onto each skewer. Repeat until you have used all the meat and vegetables.
.In a small saucepan, melt the butter over medium heat. Add the chopped onions and sauté until they turn translucent, about 3-4 minutes.
.Add the red wine, water, vinegar, curry powder, sugar, bay leaves, cayenne pepper, and black pepper to the pan with the onions. Stir well to combine.
.Allow the sauce to cook for 3-4 minutes until it thickens slightly. Remove from heat and add the mustard, soy sauce, ketchup, Worcestershire sauce, and cooking oil. Stir well.
.Use a basting brush to generously coat each skewer with the sauce on all sides.
.Place the skewers on the grill and cook for 10-12 minutes, turning occasionally until the meat is charred on the outside and cooked to your desired internal temperature.
.Remove the skewers from the grill and let them rest for a few minutes before serving.
.Enjoy your delicious Sosaties (South African Kebabs) with friends and family!
