Ingredients

1 large eggplant ( I used 1 smallish and three smallish zucchini )
2 tablespoons olive oil
1 medium onion
1 tablespoon olive oil
1 -2 minced garlic clove
250 g mushrooms , sliced
1 -2 tablespoon basil pesto
1/2 teaspoon salt
ground black pepper
1 cup sour cream or 1 cup unsweetened plain yogurt
1 large egg
1/2 teaspoon salt
1/2 - 1 cup cheddar cheese ( tasty )

Instructions

1.Cut the eggplant and zucchini into 1/4 inch thick slices and season with salt and pepper.
2.Heat 2 tablespoons of olive oil in a pan over medium-high heat, add the eggplant and zucchini slices and cook until lightly browned on both sides.
3.In another pan, sauté the onions and garlic in 1 tablespoon of olive oil until the onions are translucent, then add the sliced mushrooms and cook until the mushrooms have released all their juices.
4.Add 1 or 2 tablespoons of basil pesto to the mushroom mixture and stir well. Season with salt and pepper.
5.Preheat the oven to 375°F.
6.In a separate mixing bowl, whisk together the sour cream or unsweetened plain yogurt, egg, and 1/2 teaspoon of salt.
7.Grease a baking dish with butter or cooking spray and spread a layer of cooked eggplant and zucchini on the bottom.
8.Pour the mushroom mixture over the eggplant and zucchini, then add another layer of cooked eggplant and zucchini over the mushroom mixture.
9.Pour the sour cream or yogurt mixture over the layers of vegetables.
10.Sprinkle shredded cheddar cheese over the top layer of the vegetables.
11.Bake in the preheated oven for 30-40 minutes or until the cheese is golden brown.
