Ingredients

8 ounces dried sorrel
2 cinnamon sticks ( each approximately 3 inches long )
1 piece orange peel ( fresh or dried , approximately 3 by 1-inch )
12 whole cloves
10 -12 cups water
1 1/2 cups sugar ( or more to taste . Granulated will give a better colour . )
1/4 cup rum ( or more , to your taste )
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
Sorrel Drink is a popular beverage in Trinidad, particularly during the Christmas season. Made from dried hibiscus flowers, or sorrel as it is more commonly known in the Caribbean, this drink has a sweet-tart flavor that is complemented by spices like cinnamon and cloves. Instructions

1.Rinse sorrel and put it in a large pot with cinnamon sticks, orange peel, and cloves. Add water and bring to a boil. Cover and let it steep for at least 4 hours or overnight.
2.Strain the mixture and discard the sorrel. Add sugar to the liquid and stir well. Keep in the fridge to chill.
3.When ready to serve, add rum (if using) and ground cinnamon. Stir well and serve over ice.
