Ingredients

2 1/4 - 3 lbs chicken pieces
2 celery ribs
1 large carrot , diced
1 leek , cut in 3-inch pieces
oregano

bay leaf
1 parsley sprig
2 cups milk
6 -8 slices bread
oil
2 garlic cloves , crushed
2 medium onions , chopped
2 tablespoons yellow aji limo chiles , seeded ( aji amarillo )
1 tomatoes , peeled , seeded and chopped
9 ounces farmer cheese , diced ( feta )
3 medium potatoes , peeled and diced
1/4 cup fresh parsley , chopped

Instructions

1.In a large pot, bring the chicken pieces, celery, carrot, leek, oregano, salt, pepper, bay leaf, and parsley sprig to a boil with enough water to cover the ingredients.
2.Reduce the heat, cover, and let simmer for 30-45 minutes until the chicken is cooked.
3.Remove the chicken and shred it in a separate bowl before setting it aside.
4.In a separate pan, heat the oil and sauté the garlic and onions until they are soft.
5.Add the aji limo chiles, chopped tomato, and diced potatoes to the pan and simmer for 10 minutes.
6.Add the chicken broth to the vegetable mixture and bring to a boil.
7.Place the bread slices in the bottom of a large pot and pour the vegetable and chicken broth mixture over the bread.
8.Layer the shredded chicken and diced cheese on top of the bread slices.
9.Let simmer for 10-15 minutes before topping with fresh parsley and serving.
