Ingredients

1 -2 dried chipotle chile
12 ounces dry noodles ( like spaghetti or angel-hair pasta )
1 large yellow onion , diced small
2 cloves garlic , minced
3 medium tomatoes , cored and roughly chopped
1 small green pepper , diced
2 cups chicken or 2 cups vegetable broth
1 bunch cilantro , finely chopped
4 sprigs mint , chopped
2 ounces monterey jack cheese , shredded
6 tablespoons oil

Instructions

1.Preheat oven to 375°F.
2.Boil the chipotle chile in 2 cups of water for 10 minutes. Strain and discard the chile and save the water.
3.Cook the noodles al dente, rinse and drain the noodles and set aside.
4.Heat oil to a pan and sauté the onions for 3 minutes over medium-high heat.
5.Add garlic and green pepper and cook for an additional 3 minutes.
6.To the veggies, add tomatoes, broth, salt, and chipotle water. Bring to a boil.
7.Reduce heat and simmer uncovered for 8 minutes. Taste and adjust the seasoning if needed.
8.Coat noodles in the sauce, reserving about 2 cups of the sauce.
9.Transfer noodles and the reserved sauce into the prepared 9 inch baking dish.
10.Sprinkle cheese over the top and bake in the preheated oven for 25 minutes or until cheese is melted and bubbly.
