Ingredients

2 lbs pork ribs or 2 lbs pork neck bones
8 cups water
salt and pepper
1/2 teaspoon ground cumin
1/2 teaspoon sazon goya with azafran
2 whole scallions
1 can yellow hominy ( maiz pelao amarillo )
2 medium potatoes , peeled and diced
1/4 cup chopped fresh cilantro

Instructions

2.Remove the scallions and discard. Take out the pork ribs or neck bones and shred the meat off the bones. Discard the bones and return the shredded meat to the pot.
3.Add the yellow hominy (maiz pelao amarillo) and diced potatoes to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes until the potatoes are tender.
4.Add the chopped cilantro, Colombian Tomato and Onion Sauce (Hogao), and fresh thyme. Simmer for 5 minutes more. Serve hot.
