Ingredients

1 lb dried hulled fava beans ( hulled favas are yellow or greenish , not brown )
8 cups chicken stock ( home made is beat )
6 garlic cloves
1 large white onion
1 1/2 lbs tomatoes ( about 10 plum tomatoes )
6 medium dried pasilla chili peppers , seeded and stemmed
2 tablespoons olive oil
2 tablespoons vinegar
1/2 teaspoon dried Mexican oregano
salt , to taste
1/2 cup fresh cilantro
2 tablespoons of fresh mint
1/2 cup queso Anejo cheese
5 teaspoons olive oil
of fresh mint , to garnish
Sopa De Habas is a traditional dish in Latin American countries. It's a hearty and satisfying soup made with fava beans, and flavored with fresh mint and pasilla chili peppers. This recipe adds a twist by roasting onions, garlic, and tomatoes before blending them into a puree, which creates a richer and deeper flavor in the soup. Instructions

1.First, rinse the fava beans and add them to a pot with the chicken stock.
2.Bring the pot to a boil, then reduce the heat to a simmer and cook for 1 hour, or until the beans are tender.
3.While the beans are cooking, preheat your oven to 350°F.
4.Cut your onions into wedges and place them in a baking dish. Add your tomatoes and garlic to the dish as well and roast them in the oven for 25-30 minutes.
5.Once your roasted veggies are done, add the roasted garlic, onions, and tomatoes to a blender along with the pasilla peppers, vinegar, oregano, and cilantro. Blend until smooth.
6.In a separate pot, heat up the olive oil over medium heat. Add the puree and cook for 5 minutes.
7.Once the beans are cooked, drain them and add them to the pot with the puree. Simmer for 20 minutes.
8.Serve your soup in bowls and top each with crumbled queso Anejo, fresh mint, and a drizzle of olive oil.
