Ingredients

1 poblano chiles or 1 green bell pepper
1 medium onion , quartered
2 garlic cloves
2 cups corn kernels , fresh ( or frozen and thawed )
6 sprigs epazote , fresh ( or dried )
1 bay leaf
4 cups chicken broth
3 tablespoons cilantro , chopped
salt
pepper
1 -2 tablespoon pure chile powder
1 lime , cut into 4 wedges
Sopa De Elote, or Mexican corn soup, is a delicious and creamy soup that's perfect for warming up on chilly days. The name means corn soup in Spanish, and it's a popular dish in Mexico and other parts of Latin America. The soup is made with fresh or frozen corn, poblano pepper, onions and garlic, and is seasoned with chili powder and cilantro. It's a simple and easy-to-make recipe that's perfect for weeknight dinners or as part of a larger meal. The soup is often served with lime wedges and tortilla chips on the side.

Instructions

1.Char the poblano pepper over gas flame or in a broiler until blackened and blistered. Do this for around 5 minutes, turning occasionally.
2.After charring, put poblano in a bowl and cover with plastic wrap to loose the skin.
3.Once the skin is loose, remove it and remove its seeds and the stem. Slice the pepper into small pieces and set aside aside.
4.Purée onion and garlic in a blender until smooth.
5.Add the onion and garlic mix to a large saucepan with a tablespoon of olive oil. Cook for about two minutes until it start to soften.
6.Add corn kernels, poblano, epazote, bay leaf and chicken broth to the saucepan and stir well. Bring the pot to boil, then reduce the heat and let it simmer for 20 minutes.
7.Remove epazote and bay leaf from the soup and blend the soup in batches in the blender until smooth.
8.Return soup to the saucepan and add chopped cilantro, chile powder, salt and pepper. Cook for further two minutes until heated through.
9.Serve soup with lime wedge to get a tangy flavor.
