4 1/2 cups milk
1/4 cup butter , softened
1 teaspoon sea salt
2 poblano chiles , roasted , peeled , seeded , and diced
6 tablespoons shredded monterey jack cheese
6 corn tortillas , cut into thin strips and fried crisp

Instructions

1.In a large pot, combine the corn kernels, 4 cups of milk, butter, and sea salt over medium-high heat.
2.Bring the mixture to a simmer and cook, stirring occasionally, for about 15 minutes.
3.Remove the pot from the heat and let it cool for a few minutes.
4.Using an immersion blender, puree the mixture until smooth. Alternatively, blend in batches in a blender until the desired consistency is reached.
5.Return the pot to the stove and add the remaining 1/2 cup of milk, roasted and diced poblano chiles, and shredded Monterey Jack cheese. Cook over medium heat, stirring occasionally, for about 5 minutes, or until the cheese has melted and the soup is heated through.
6.Divide the soup among bowls and top with the fried corn tortilla strips before serving.
