Ingredients

4 shallots , peeled and halved

4 pounds meaty oxtail pieces , at room temperature
2 large carrots , cut into 2-inch pieces
3 stalks celery , cut into 1-inch pieces
water to cover
2 teaspoons salt
1/2 teaspoon ground black pepper
3 waxy potatoes , scrubbed and cut into 1 1/2-inch chunks
3 large carrots , cut into 2-inch pieces
2 tablespoons white sugar
2 tablespoons fish sauce
3 ripe roma tomatoes , sliced horizontally into 1/2-inch wedges
1 can French-fried onions

Instructions

1.In a blender or food processor, combine the shallots, 1/2 of the quartered onion, ginger, and garlic. Puree until smooth.
2.In a large soup pot, heat the canola oil over medium-high heat. Add the pureed mixture, cloves (if using), nutmeg, and cinnamon. Cook, stirring occasionally, until fragrant and slightly browned, about 5 to 7 minutes.
3.Add the oxtail pieces, carrots, and celery to the pot. Cover everything with water, adding more if necessary to make sure everything is completely covered. Bring to a boil, then reduce the heat to medium-low and simmer, covered, for about 2 hours, stirring occasionally, or until the oxtail is tender.
4.Once the oxtail is tender, add the salt, black pepper, potatoes, large carrots, sugar, and fish sauce. Cook for another 30 to 45 minutes, or until everything is tender.
5.Garnish with romaine tomato wedges and French-fried onions before serving.
