Ingredients

6 cloves garlic , chopped and divided
1 inch fresh ginger , peeled and finely chopped , divided
4 red chilies , coarsely chopped and seeded ( or not depending on your heat tolerance )
1 teaspoon mustard seeds
1/2 teaspoon fenugreek seeds
1/2 teaspoon turmeric
1/2 teaspoon ground cumin
4 tablespoons white wine vinegar , divided
3 tablespoons olive oil
2 onions , finely chopped
1/2 lb tomatoes , chopped
2 lbs pork shoulder , trimmed of fat and cubed
1/2 teaspoon salt
2 1/2 cups boiling water
5 curry leaves , chopped
6 whole cloves
1 cinnamon stick
1 teaspoon sugar
Soor Vindaloo is a spicy curried pork dish that is popular in the Western Indian region of Goa. This dish is known for its spicy and tangy flavors that are achieved by the use of vinegar and spices such as cinnamon and cloves. The dish is perfect for meat lovers and is great when paired with rice or bread. The cooking process is a bit long but it is worth it in the end. Instructions

1.In a blender, make a paste of half of the chopped garlic, half of the chopped ginger, red chilies, mustard seeds, fenugreek seeds, turmeric, cumin, and 2 tablespoons of white wine vinegar.
2.Heat olive oil in a large pot and add onions. Cook until they turn brown.
3.Add the remaining garlic and ginger to the pot and cook for another minute.
4.Add the paste to the pot and cook for another 2 minutes.
5.Add the tomatoes, pork, salt and cook for 5 minutes.
6.Pour the boiling water into the pot and add curry leaves, cloves, cinnamon stick, sugar, and remaining white wine vinegar. Stir well and bring to a boil.
7.Reduce heat to low, cover and let simmer for 2 hours or until the pork is tender. Serve hot with rice or bread.
