Soofganiyot, or Hanukkah doughnuts, are a traditional Jewish dessert enjoyed during the holiday season. These deep-fried doughnuts are filled with sweet apricot or strawberry jam and dusted with powdered sugar. They are typically served during the eight-day holiday of Hanukkah, which celebrates the rededication of the Jewish temple in Jerusalem. The oil used to fry the doughnuts is symbolic of the miracle of the oil that burned for eight days instead of one in the temple. Soofganiyot are a delicious and fun way to celebrate the holiday season with your loved ones.

Instructions

.In a small bowl, dissolve the yeast in the lukewarm water then mix in the sugar. Let the mixture sit for 5-10 minutes until it begins to foam.
.In a large bowl, whisk together the flour and salt. Make a well in the center of the flour and add the yeast mixture, eggs, egg yolks, margarine or butter, brandy, and about 3/4 cup more warm water.
.Mix until the dough comes together and forms a ball.
.Turn the dough out onto a floured work surface and knead until it is smooth and elastic. Add more flour if the dough is too sticky.
.Transfer the dough to a large greased bowl and cover with a clean dish towel. Let it rise in a warm, draft-free place for 2 hours or until it has doubled in size.
.Preheat the vegetable oil for frying in a medium-sized pot or deep fryer until it reaches 375 degrees Fahrenheit.
.On a floured surface, roll out the dough to 1/4 inch thickness. Cut out circles using a 2-3 inch cookie cutter or drinking glass.
.Place the dough circles on a baking sheet and let them rest for 10-15 minutes.
.Gently drop the doughnuts into the hot oil, a few at a time, and cook for about 1-2 minutes on each side or until they turn golden brown and are cooked through.
.Remove the doughnuts from the oil using a slotted spoon and transfer them to a paper towel-lined plate to cool.
.Fill a pastry bag fitted with a small round tip with the apricot or strawberry preserves. Poke a hole in the side of each doughnut and fill it with the jam.
.Dust the doughnuts generously with confectioner's sugar before serving.
