3 lbs red onions , after peeling and slicing thinly
1/2 pint red wine vinegar
1 teaspoon pickling spices
1 teaspoon salt
1 teaspoon ground ginger
12 ounces soft brown sugar

Instructions

1.In a large heavy-based saucepan, cook the onions, red wine vinegar, pickling spices, salt, and ginger together over medium-low heat for 30 - 40 minutes.
2.Add the brown sugar to the onion mixture, and continue to cook for an additional 30 - 40 minutes, stirring occasionally, until the marmalade has thickened.
3.Check for seasoning, add salt and pepper if desired.
4.Once the marmalade has reached the desired consistency, remove from the heat and pour into sterilized jars, leaving a 1/4 inch headspace at the top of the jar.
5.Seal the jars tightly and store in a cool, dark place for up to 6 months.
