Ingredients

4 ounces butter
6 ounces dark brown sugar
2 eggs , beaten
8 ounces whole meal flour
1 teaspoon ground mixed spice
1 teaspoon ground cinnamon
2 teaspoons baking powder
1 lb cooking apple , peeled , cored and chopped
3 -4 tablespoons milk
1 tablespoon clear honey
1 tablespoon light brown sugar

Instructions

1.Preheat your oven to 180°C (160°C fan)/350°F/gas mark 4 and grease a 20 cm cake tin.
2.In a large bowl, cream together the butter and dark brown sugar until light and fluffy.
3.Gradually add the beaten eggs, mixing well after each addition.
4.Sift the wholemeal flour, mixed spice, cinnamon and baking powder into the mixture.
5.Add the chopped apple and mix well.
6.Stir in enough milk to make a soft dropping consistency.
7.Spoon the mixture into the tin and smooth the surface.
8.In a small bowl, mix together the clear honey and light brown sugar.
9.Drizzle the mixture over the cake surface.
10.Bake for 50-60 minutes or until a skewer inserted into the centre of the cake comes out clean.
11.Remove from the oven and cool for 10 minutes before removing from the tin.
12.Serve warm or cold, with custard or cream if desired.
