1/2 small onion , finely chopped
1/2 chili pepper , finely chopped

Instructions

1.In a pan, heat the oil over medium-high heat.

5.Add the diced potato, diced carrot and diced bell pepper. Give it a stir and then pour in the water. Bring to a boil and let everything cook for 20 minutes or until the vegetables are tender.
6.Salt to taste and serve hot with a side of bread or rice if desired.
