Instructions

1.In a large bowl, mix the cubed chicken with salt and pepper.
2.In a pan, heat vegetable oil over medium flame and add garlic, ginger, and red onion to it.
3.After 2-3 minutes, add curry powder to the pan and cook for 1 minute.
4.Add chicken to the pan and cook for 10-12 minutes or until it turns golden brown.
5.Add coconut milk, and bring it to a boil. Once it starts boiling turn off the heat and let the mixture cool.
6.Now, take a large bowl, add the cooled chicken mixture to it and stir in fresh cilantro, basil leaves, curry powder, salt, and black pepper. Mix it well and refrigerate it for 20 minutes so that the flavors get infused well.
